Rabbits have several defenses from preditors:
Camoflage (their coloring blends in with their surroundings),
they can remain motionless, so as not to be seen,
they can run fast and have a long gait,
their hearing is very good, (but the long ears are for cooling their bodies),
they build their homes in places that preditors can't easily access,
and they have very sharp claws with strong hind legs for kicking.
I would know this as I have a rabbit. Well, some rabbits actually live in family groups. Therefore, they make a small squeal and run from danger. Also, rabbits can run very quickly. And they can bite, HARD!!! (I know that from experience!!!) If a rabbit detects any sign of danger, it will thump its hind legs on the ground making a sound which alerts other rabbits to the danger.
Rabbits will try to run to the nearest entrance of their burrow to escape from danger.
Rabbits will toilet away from their burrow entrances so as not to give away the burrow location.

Wild rabbits have instincts that tell them what foods are dangerous and should be avoided. Pet rabbits have lost these instincts, which is why it's important that pet rabbit owners know what is safe and what isn't to feed their rabbits.
Rabbits protect themselves from predators by running away and hiding (the underground burrows where a rabbit lives are the usual hiding spot; pet rabbits should be provided with hidey-holes, like cardboard boxes, for their sense of security). Pet rabbits will usually try to run away and hide from predators, just like wild rabbits; if they're prevented from running and hiding (for example, if they're in an outdoor hutch), rabbits sometimes die of stress/shock because they're terrified and can't do anything about it.
Some rabbits are aggressive and will fight their attackers. Rabbits have very strong hind legs and their nails may look dull, but they're sharp enough to disembowel an attacker (like a cat, or another rabbit) -- it all comes down to whether or not the rabbit's able to get in the right position. For example, a stoat that has jumped on the rabbit's back and has its mouth gripped on the rabbit's neck will probably win (eventually). On the other hand, if the rabbit can turn itself around and angle its hind feet at the other animal's belly, the rabbit has a good chance of winning (altough her injuries could lead to death eventually due to infection; or, from pain leading to depression, GI stasis, and then death).
Rabbits also protect themselves by paying attention to their surroundings. Grazing in long grasses, for instance, hides them from foxes and other land predators; resting under a tree shields them from hawks and other predators above. Knowing the most direct way back to the burrow helps in quick escapes.
Thats hard. Perhaps it's nose, as it detects danger and uncertain or unknown smells quickly and from far - away distances, but then it's springy legs can leap away from predators quite swiftly, but then it's ears will detect flapping from above if a rabbit - catching bird comes, or maybe someone's voice or another not - so - wary predator that is trying to hunt down it's clever prey. I would say the legs. You might not agree.
