Black olives are actually green olives that are ripe. There are many types of olives and many of them are already dark in color. But the basic green olive (neé spanish olive or manzinilla olive) ripen over time into black olives ;)

Olive green is a tricky color because there are so many shades of Olive green, from light olive to loden. If the olive you are trying to use is a dark olive, treat it as a brown. Usually any colors that go with brown will also go with a dark olive. The lighter olives present more of a problem but you can get around this by realizing that olive green is a mixture of yellow and black. Black is a good accent for a light olive, you can also get away with some shades of navy. Yellow is also a good color selection. On a dark olive, red makes a good accent color. Your best bet is to hold the color you're thinking of using next to the olive, to see how they react to each other.

The reason that we don't taste the bitterness of the black olives (when we buy them in a can) is because most of the oil and flavor is taken out, when marinated in water with a slight bit of vinegar and just a very small amount of salt. The green olives that we buy in the jar are marinated in water with a bit of vinegar and lots of brine salt, and often stuffed with pimentos. The brine salt and vinegar kills the bitterness of the olives; this is why in the US when you taste green or black olives , you usually can't taste the original authentic flavor. Another difference is the curing. Olives are cured in brine (salt and water). A green olive is picked early so it remains green after curing. A black olive stays on the tree longer and is black. It is black when cured, too.

As an artist, I'd have to say... Grayish Green. Without specifics on what sort of shades the green and gray are, I can't be entirely sure. It could range from a very neutral olive green to some form of black ocher.
