I think that festivals are important to many people because it reminds important events of the past such as lent where Jesus was forced to go with no food or water for 40 days starting on ash Wednesday ( the day in Febuary after shrove Tuesday)

I suppose that if we were to get technical about the word then symbols represent something visible that by association or convention represents something else that is invisible. The symbol of the cross reminds us of the death of Christ. The Sacrament is symbolic of His death and resurrection. As explained symbols are to remind us of something that is not present, yet exists or has existed.
