Sundrying tends to evaporate the excess water without altering the chemical composition of the food. With the absence of water, the growth of bacteria and fungus is stunted. However the food retains the original nutritional value and taste.

Drying food using sun and wind to prevent spoilage has been practised since ancient times, and was the earliest form of food curing. Water is usually removed by evaporation (air drying, sun drying, smoking or wind drying) but, in the case of freeze-drying, food is first frozen and then the water is removed by sublimation.
