All organisms are genetically variants and in the population of people that colonized the northern latitudes were people that had lighter skin and some very light due to random mutation. This variation allowed better vitamin D utilization which was reproductively more successful at these latitudes. So, the alleles in the population changed and fairer skin was the result.
