Animals and plants are made of billions of cells because if there was only one or two cells the nutrients would take years to get to the nucleus and the cell/nucleus/organism would die. Same with the oxygen that the organism absorbed. Since the plant/animal is made of billions of cells the nutrients and oxygen get to the nucleus quickly.
this is not a system by choice but by chance , first when there were prokaryote they developed into eukaryote to exist in the rapidly changing environment and in after some time ( about a billion or so years ) simple multi-celled organisms were formed , 'by chance' not by choice then they evolved ( there are many theories about how they evolved ) this kept taking place until today . ITS going on even today but with a slower pace.and if living things were continuous , the expansion and contraction of muscle cells used for locomotion and rigidity and flexibility of plants , trees etc would not have been possible and we can observe many successful such examples in nature about why multi-cellular organisms are made up of cells which are fundamental and basic forms of life.
