The common carrot as seen everyday is orange. Carrots reflect orange light to the eyes from the carotene that they contain. There are also white, purple, yellow and red carrots.

Orange carrots were first created and mass farmed by the Dutch in the 1600's.

Carrots absorb certain wavelengths of light more efficiently than others, and this makes them appear orange. Beta-carotene is the main pigment and is mainly absorbs light in the 400-500nm region of the visible spectrum with a peak absorption at about 450nm. Carotenoids are one of the most important groups of natural pigments. They cause the yellow/orange colors of many fruit and vegetables. Though beta-carotene is most abundant in carrots, it is also found in apricots, pumpkins and nectarines. Dark green vegetables like spinach and broccoli are another good source. In those, the green color of chlorophyll masks the orange color. When leaves on trees die in autumn, you can see the underlying colors which come from carotenoids and sugars.
