Cookie sheets don't have sides so that the hot air in the oven can get to the cookies evenly. Sides on the sheets would block the heat from accessing the cookie from all sides with the same temperature. That is what my home ec teacher told me 10 years ago.
cookie sheets dont burn cookies. ovens do.
Standard nonstick cookie sheets do, insulated nonstick cookie sheets don't.
wax cookie sheets are usually best
insulated cookie sheets hold the heat from the oven longer than an air bake cookie sheet
Typically, a cookie sheet is aluminum.

Cookie sheets range in price from 13 USD up to as much as 80 USD. The price depends on the material the sheets are made of and the kind of non-stick finish that is used.

A cookie sheet is a type of baking pan. A cookie sheet has no sides (or only one side) so cookies can slide easily from the baking sheet onto a cooling rack. Other types of baking pans have sides to contain food. Cookies are frequently baked on jellyroll pans, which have 1/2" sides and are often confused with cookie sheets.
Kitchen Aid, Hamilton Beach and Martha Stewart all sell silicone cookie sheets that are highly rated by customers.
