It's due to a combination of factors. Copper is a very good conductor of heat, which is pretty much the most important need for heating/cooling systems. And it is widely available, in multiple sizes, and can be worked with conventional tools including soldering torches and so forth. It has more than adequate strength. And does not corrode like iron pipe. Is resistant to breakage during cold weather. And, historically copper (one of the metals known for centuries by man) has been very low in cost. Oh, and it can be joined to other metals, like aluminum and steel in several ways, helping to decrease the manufacturing cost of these systems.
Copper is used for cooking pots and water pipes because it is an excellent conductor of heat and is an nonreactive, stable metal that won't corrode.
