He did this so that All that believe in Him will be the Church and the Bride of Christ.
The church is not something created, it is merely a reference to the believers.
He didn't himself - two of his disciples did. They went to Rome to spread Christianity and built churches for people to praise and worship God. The other 10 disciples did too, but in other parts of the world.
The Church as an Institution
Christ did not build the buildings (churches), but the institution (the Church), which He founded to spread his message.

I would guess that Jesus wanted his disciples to be united in a group; instead of individually all factioned up into splinter groups.
The Apostle Paul mentioned the way it should be among Christs followers in 1 Cor 1:10: "Now I exhort YOU, brothers, through the name of our Lord Jesus Christ that YOU should all speak in agreement, and that there should not be divisions among YOU, but that YOU may be fitly united in the same mind and in the same line of thought."
Another reason: The good news that Christ brought to mankind about him setting up a Kingdom; this needed to be preached in all the inhabited earth. (Matt 24:14) In order to have this accomplished, he united his disciples and sent them out to preach; and to teach people; first to the Jewish people, then to all the nations. This needed to be a united effort.
Another reason: Jesus often talked about him being the shepherd, and his disciples being sheep. Sheep tend to be in a flock, instead of being individuals. Being separated from the flock could be damaging and dangerous for them. Wolves might come. Likewise with Christs disciples, being together in a group they could encourage and strengthen each other.
