The Word does not exactly say He served wine. It says He served οἶνος and oinos could be anything that is made from grapes. We know that Christ contained the wellspring of life and this "living water" when drank does not make you thirsty again. This represents Joy. Unlike happiness, Joy comes from doing what is right and it is sustaining whereas happiness comes from indulgents of self and is therefore fleating. We also know that wine (the blood of grapes) represents the blood (sacrifice) of Christ (God, the vine, with us). So evidently turning water into oinos could be said to represent receiving what is actually Joy through the blood of Christ (doing the will of God).
