The reason was that Caesar was impressed with the complexities of the Gaulic Celts. Like most Romans, he believed that they were barbarians, when the Celts were a sophisticated and advanced society (even though they existed in different Clans). He respected their battle prowess, which was unique for Caesar, who respected few of his conquests.
Essentially, take from this that Julius Caesar was remarkably impressed with the Gauls, who were far more than simple barbarians like the Germanic Goths of the time period.
