Uniforms were colored by departmental divisions, namely command, operations, and sciences. Circa 2265, the colors used were lime-green (appeared yellow or gold on camera) for command personnel, red for operations personnel, and blue for science and medical personnel. As Captain Kirk was obviously in the command division, he would have worn a yellow (or green) uniform.
In Kirk's time, command officers wore gold and operations officers (including security) wore red. Sometime during the following century (around the year 2353, to be precise), this was changed so that command officers wore red and operations officers wore gold. In both periods, science officers wore blue.
Kirk sometimes wore a greenish "cross collar" tunic, notably in "The Trouble with Tribbles."
This occurred when the producers were trying to get a look for Kirk that made the Captain stand out from the other Command personnel wearing gold uniforms. The actual color for Command was greenish (chartreuse) as well, but this appeared yellower due to the lighting, and the photographic processes being used to achieve better skin tones.
Captain Kirk always appeared to have brown hair to me, personally; in certain episodes it took on a slightly blonder look, though.
