Because "That's where the money is". For a substantial part of human history, spices were very expensive commodities (black pepper was, for a time, literally worth it's weight in gold). Voyages were dangerous, and needed to be paid for. A successful voyage that brough back prized commodities (spices, silk, tea) was a very lucrative undertaking for captain and crew.
