She was the child of literary parents, the 'wife' of a very famous poet, the friend of another very famous poet. When her 'husband' died she had to make herself a living so tried writing. It just seems natural that she would do so. The specific idea for 'Frankenstein' grew from ghost stories shared by other authors.
According to Mary, she conceived the idea after listening to ghost stories at Lord Byron's house, on Lake Geneva in Switzerland. She was there with Percy Shelley and her half-sister Claire, who later became Lord Byron's lover.
Byron had challenged all of his guests to come up with the most terrifying ghost stories they could. After several days of the rain, storm, and gloom, and those stories, she had a nightmare from which the concept of Dr. Frankenstein's monster was born.
On a bet. No, seriously. She was on vacation with Percy Bysshe Shelley (to whom she was not yet married, and in fact Shelley was actually married to someone else, though he and Mary Godwin, as she then was, had a son) in Switzerland with Lord Byron and Mary's stepsister Claire Claremont, whom Byron had gotten pregnant. One evening, they were talking about galvinism, which was a fairly recent discovery at the time, and decided to have a little contest to write a story involving it. Mary was the only one who actually did.
It's kind of amusing that Percy Bysshe Shelley and Lord Byron were considered leading literary lights of their time, and yet today, Frankenstein is by far the most famous work by anyone at that Geneva villa.
