Sheer spite and nastiness. Saruman wanted to get back at the Hobbits who had indirectly caused his downfall.
In The Lord of the Rings, Meriadoc Brandybuck and Peregrine Took (Merry and Pippin) were captured by Orcs who were taking them to Isengard, Saruman's castle. The Riders of Rohan intercepted the orcs and slew them all, but Merry and Pippin had escaped during the battle and fled into Fangorn Forest. In the forest, they met Treebeard, one of the oldest of the Ents.
With a little prodding from Merry and Pippin, Treebeard roused the Ents and led them to attack Isengard and destroy Saruman's fortress.
Because of this, Saruman thought that he would "get a little of his own back" and left Isengard. He traveled to the Shire and had several months in which to cause mischief and havoc.
Saruman took over the Shire in "The Return of the King" as a final act of revenge against the hobbits who had thwarted his plans. He saw the Shire as a place of peace and prosperity and sought to ruin it out of spite. Additionally, he was seeking to assert his power in any way he could after being defeated at Isengard.
In the book it's a character called Sharkey from memory, who turns out to be Saruman. The hobbits see him off. This wasn't in the films as they killed Saruman off on the top of Orthanc in the second one.
When Gollum stole the Ring from Frodo, Gollum was dancing so madly around that he lost control. Gollum fell into Mt.Doom with the Ring (his "birthday-present"). Before he landed in the lava his last wail was "Precious!"

Basically, the ring got thrown into Mt. Doom. Frodo decided that he wanted to keep it for himself, but then Gollum tried to steal it from him and fell into the lava with the ring. Aragon and Arwen got married and Aragon became the King of Gondor. In the book, when the hobbits went back to the Shire, Saruman had taken it over, so they had to fight to get it back, and Sam became the mayor. That part wasn't in the movie though. At the end of both, Frodo, along with Bilbo, Gandalf, and some elves (including Galadriel) left Middle-earth.
The hobbits of the Shire might describe describe Gandalf as wise, powerful, and fun-filled.(Gandalf is over 3000 years old!)
