Because SEGA never bothered to research about it so they just said Sir Galahad was a white knight instead of Sir Pellias. OR, maybe it was because they didn't want Silver and Amy Rose together because in the Arthurian tale Sir pellias kissed the Lady of the Lake because they loved each other.
