All three religions (like various others) are based on a combination of written texts and oral tradition, though primarily a set of written texts. Texts of any kind need interpretation to be understood, and differences in interpretation can lead to divisions among the interpreters. In something like religion, which for the majority of adherents is the most important thing in their lives, these differences are extremely significant. When they touch on matters deemed to be central to what the religion means to a person or group, a schism - breaking away - can occur, leading to the divisions you mention.
