firstly, because it offers greater protection than mail/maille as its rigid, and so was more protective of vulnerable kneecaps (the first part of the body to be protected by plates), and elbows.
Secondly, plate was less time consuming to produce compared to mail, where tens of thousands of links would have to each be assembled and locked together by hand. That saving in time eventually made plate more cost-effective.
