There is a Japanese saying that goes something like when you're outside of your community there is no shame. Within Japan there is always this stigma of how people around them perceive them. But when they're outside of Japan where no one knows them, all sense of shame is off.

There are many reasons that are considered by scholars. One of which is that Nanking was the capital of China at the time and Japanese army believed if Nanking suffered a severe defeat, that will scare the rest of China into surrendering. Another speculation is that after the battle at Shanghai, Japanese soldiers thirsted for revenge and took it out on Nanking. Sometimes, it is impossible to fully understanding how something this terrible could have ever happened.

Why did the Alamo Mexican soldiers not spare soldiers lives?

They were ordered to kill all the Texan soldiers at the Alamo, and as soldiers they obeyed their orders, whether they wanted to or not. Santa Anna had promised that the entire garrison would be killed if resistance was offered. He kept that promise, sparing only the two civilians he captured. Santa Anna wanted to break the Texan will to fight by convincing them that any resistance to Mexico meant certain death.

They were paid by the German government. Incidentally, I wouldn't regard a person who murders innocent civilians as a soldier but as a hired killer.
