In the long term, the falklands war was started because of a long-standing territorial dispute between Argentina and the UK over the sovereignty of the islands. The Argies claim geographical sovereignty, whilst the UK retains sovereignty due to the fact that the Falkland Islanders want to retain British.
In the short term, the war started because the military junta in Argentina wanted a way to divert domestic attention away from the failing economy and collapsing social order. To do this, the junta tried to evoke the nationalistic spirit by invading the Falklands (know as "las malvinas" in Argentina). The Junta also didn't think that Britain would bother fighting over the Falklands, so didnt see much risk in the attack.
