It wasn't exactly canceled. They just wanted to end the series that way. They change it up though. For instance, what happens in the last episode, is what happens in the beginning of the 6th manga. Which, the anime changed up. The charachters you meet in the 8th manga, were put before the end of the anime. But you really should read the mangas. They also changed up the anime, like Akito is really a woman and she reveals that in the end of the manga. Where in the anime he is a man, and was to die young. Lots of other stuff too, but you should read the manga. (by the way, Tohru's eyes should really be brown)

The lady who wrote the original manga broke her drawing arm. The manga had to be postponed. The anime couldn't wait so they made an adaption, but the lady didn't like it. So she made them cancel the anime. You can still read the manga, although it's a tad different. If the lady never broke her arm, the show would've been finished. The show being cancelled disappointed many people. The only way it could be finished would be if fans started up a new group and finished it.

Yotsuba, it was never made into an Anime but it is a really good Manga. Also, Fruits Basket and +Anima would make great TV shows

There's no way for the average television viewer to cancel a show. The most they can do is simply not watch and perhaps if enough people, most effective people with Nielsen boxes, don't watch a show it will be canceled.
