They do not in the first anime series but in the last chapter of the manga they appear to have been together for a while and Ed proposes to her before leaving on a trip. On the last page of the manga there is a picture of Ed with a wedding ring on with Winry and their kids as well. Since Brotherhood follows the manga it's likely it'll have the same conclusion for Ed and Winry.

Then, even after Al has lost his body, he is seen writing with his right hand (Episode 7 Fullmetal Alchemist: Brotherhood - so this is also true in the manga - and episode 18 of the 2003 Fullmetal Alchemist series). I'm sure there are also more instances where he writes, but there ya go!
