Salt water will eat them up! Fresh water not so bad but if both are in direct contact with water then go to SS Screw. Now What type of wood are you using? They are not a good choice to be used with redwood, cedar, or treated lumber, because the acids and chemicals in these woods will eat away at the zinc coating.

yes, salt solution increases the conductivity of the water which increases the corrosion (rust) of the iron.

I put an iron nail in tap water and salt water and then purified water and salt water and both times the iron nail rusted faster in the tap and purified water versus the salt water.

Yes because the salt speeds up the electron transfer between the oxygen dissolved in the water and the iron nail therefore oxidising the nail faster
