I think it's because that's what the vampires do to make the skin softer, or maybe they just have a unmentioned power that if they lick the skin then the blood will start coming to that spot. Although in one of the vampire knight episodes (can't remember if it happened in the manga or not.) Kaname had licked Yuki's arm to heal her cut, so maybe it's just to make it heal faster.
