Light appears white when there is a balance between the different colors of light, the color us determined by the lights wavelength.

Clouds look white because of the way they scatter light, as sunlight passes through the clouds the light is scattered evenly causing a white color.

If clouds are in a shadow from another cloud, or a just thick enough to cast shadows on them-selves, when they appear gray.
