The simple answer:
Oceanic crust is more dense than the continental crust, so it goes under as the two plates ram into each other. (This is called subduction)
This submerged crust melts into magma, and collects into a large pool under the continental plate where it went under. The pool of magma forces its way up to form a volcano, which sits in front of us and blows when least expected.
The whole process takes a very long time.
Also, it only happens in convergent boundaries.
A Collision plate boundary, where two continental plates that are the same in density and thickness, push against each other forming fold mountains and crumble zones. This causes Earthquakes from the pressure and stress but not volcanoes.
continental slope
Volcanoes can form at three places-1. Divergent boundaries2. Convergent boundaries (oceanic-oceanic and oceanic-continental)2. Above hot spots
continental slope
A convergent boundary between two continental plates causes both plates to crumple to form fold mountains e.g. the HimalayasA convergent boundary between a continental and an oceanic causes one to rise above the other. Granite is less dense than basalt, so the continental plate rises above the oceanic plate. This also forms mountains, like the Andes.

hotspot volcanoes are formed away from the edge of plate boundaries. Plate boundary volcanoes are near a plate boundary
continental slope
Shield Volcanoes erupt less violently and flows further then composite volcanoes. A composite volcano erupts more violently.
