Convection is heat transfer by the movement of heated fluids. Heat transfer is the movement of energy from a warmer object to a cooler object.
For the same reason that it happens in other fluids. The hot air (in this case) has a tendency to rise, and colder air, to sink, due to differences in density.
Is it called convection?
Because thing that are denser sink. Therefore, cooler rock sinks because it is denser.
They will sink in most common fluids but not all.
