Crab circulatory fluid (hemolymph) exploits the chemical hemocyanin as the oxygen carrier, which is copper based rather than iron based as in the vertebrates' use of hemoglobin. The color of hemocyanin depends on the oxidation state: when oxygenated, it changes from the colorless Cu(I) degoxygenated form to the blue Cu(II) form. Hence you might not see the blue in lobsters and crabs until you crack open their bodies and expose the circulatory fluid to air.
