The color of hemocyanin depends on the oxidation state: when oxygenated, it changes from the colorless Cu(I) degoxygenated form to the blue Cu(II) form. Hence you might not see the blue in lobsters and crabs until you crack open their bodies and expose the circulatory fluid to air.
