Females are more insecure about appearances and situations than males. When a male knows what is going on he just goes with what he is supposed to do. Girls tend to make more gestures and speak more (as well as using dramatic tones, this is why many males may seem "monotone")when it isn't necessarily needed. Such as when a girl argues with someone she will cock her chin around a lot, beat her eyelashes, and wave her arms around. What a guy does is he typically just leans his whole body forward more, maybe movign his arms outward to show innocence or his point.
(More often than none will girls wear something they just bought and immediately ask their friends what they think about it, or she will comment on how she just bought it the other day.)
So you see, saying "mmm" during a make out session isn't necessarily needed, but it reinforces positive feedback. It is the girl's insecurities and subtle need to do something about the situation more than the other so that subconsciously she feels she is in control. Like I stated above, they will move their neck and arms around like an octopus whereas guys will typically just lean forward and extend their arms, to engage more when it's about an argument.
