Guitar wood gets more supple with use and time, and therefore affects the quality of the sound. It's like breaking in a new pair of shoes. There's a certain point where age will ruin wood and certain components of the guitar, though.

The new Korean guitars are good don't buy the old though. Mexican fenders are pretty much on par with the America ones. Mexican setup is not very good though, but the quality is good. Chinese are decent they're getting there but not quite up to speed with Korean made guitars or Mexican ones. If you're going to choose one of the three, go with Korean made guitars they are great quality for a reasonable price. They are top notch these days.
