I imagine there are a variety of reasons. Assuming they are drinking caffeinated coffee, some are either unaffected by the caffeine or are not affected to the extent that their sleep will be disturbed. Others disregard this and need the coffee because they need to stay up and remain sharp at that hour, regardless of the consequences.
