Because the stars are very far away and are suns like our Sun. The planets however are in orbit round our Sun and relatively close to us. We can therefore see the movement of their orbit against the background of the "fixed" stars.

Standing looking at a constellation, you will not notice it move. You would need something to relate it to, like something on the horizon. If you look very carefully, you will see movement. Over the course of a night, it will appear to move in an arc shape, rising and then setting. If you regularly viewed a constellation across a few days or weeks, you would also notice that the time they rise is different and the time they are visible at a certain point in the sky is different. You will not notice any change in the stars in relation to each other within a constellation. Even during a lifetime, never mind one night, a particular constellation will look the same to you, as the changes would be so slight. The nearer planets, like Venus and Mars are more noticeable in their changes compared to other planets.
