Protons and neutrons are not elementary particles. They're made of particles called quarks (which we're reasonably sure areelementary particles). These quarks are held together in hadrons such as protons and neutrons by something called the color force, also known as the strong nuclear force.

The residual color force, which you can sort of think of as "left over" from holding the individual protons and neutrons together, holds the collection of protons and neutrons together in the nucleus.
