Because they want to stand up for what they believe in.
Just like how other people protest.
Some people do and some people don't. But for animals some people protest on killing all of the dangerous animal like the kind that are venomous but otherwise no. And for plants some people would like to get rid of cactuses and those other dangerous plants!

Some can and do protest. In others, people are very poor and it is hard to organise a protest. Some are not well educated. Some find it hard to get together so it is difficult to mount a big protest. They might not be able to travel to the bigger cities to make their protests. They may not even realise the value of protesting. Some countries do not allow freedom to protest so it is more difficult and even dangerous for people to protest in those countries. So there are lots of reasons that some third world countries do not protest.
A protest rally is when people come together and protest about a common cause.

Some means of achieving this could be petitions, lobbying through email, letters or media outlets, or boycotting. Demonstrations, marches and similar can also be a form of non-violent protest, but often become violent as they progress. One example of an effective non-violent protest was the Montgomery Bus Boycott, where coloured people refused to use the buses in Montgmoery, Alabama to protest about segregation on the service. After almost a year, loss of revenue forced the company to desegregate the buses and allow coloured people to sit at the front.
Civil disobedience is considered a peaceful form of political protest. It is when people refuse to comply with certain laws.

People come together and "protest" fight for there rights against the government or at jobs.
People can protest in a dictatorship in the same way that they would protest any other form of government. Typically, a dictatorship has stricter laws prohibiting various types of protest, and therefore protesters would have to violate the law.
