Because when you pluck / strum (or in a piano;s case pressing will cause the strings to be hit ) it causes the strings to make a vibration and it will make a difference on the length and thickness of the string to what sound it will make

It also makes a sound because when you pull it and release it it makes a sound. Almost everything makes a sound.
