The most fundamental value of a symbol is that it saves time and effort in expressing ideas. Before we learned to use symbols in mathematics people had to write everything out in cumbersome sentences which made it much more difficult to reason. One of the most famous modern scientists, Bertrand Russell, went further. He said that a good notation actually suggests possibilities to a scientist.
