Taoists aren't vegetarians. They are frugal meats, but don't abolish them. They do, however, incorporate increased amounts of fruits, veggies, seeds and nuts in their diet.
Anyway, they follow such an organized diet regime because taoists regard the diet as extremely important to their physical, mental, and spiritual being. Taoists also believe that different foods have different amounts of chi in them. Basically they follow their diet to maintain and regulate balance.
Many Taoists are strictly vegetarian in order to keep in line with the Tao, but a good number of Taoists are not vegetarian and this is not seen as an infraction of Taoist values. Alcohol is also generally not consumed. Other these two things, there are no major dietary laws or practices that Taoists follow.
In my opinion, it is a good idea to follow a vegetarian diet permanently! (I'm a vegetarian, of course)
