The properties of the product different than the reactants because of bonding and structure. Take for example salt. We start with sodium which is a metal and thus metallically bonded. It is extremely soft and ductile and conducting. The second reactant is chlorine. It is covalently bonded to itself to get an outer octet of electrons - hence it exists as Cl2. When the two react together you the individual atoms in a stable noble gas formation because sodium has lost an electron and the resultant product is now ionically bonded. This means the properties have to be different.
