They don't. "The City of Light" is a nickname for Paris.
Other cities are nicknamed, "The City of Light" (such as Aurora, Illinois, so nicknamed because it was one of the first US cities to have all-electric streetlights) but New York isn't one of them. And Paris is the city that is most commonly known as "The City of Light."
