The earth rotates around the sun and spins on its own axis at the same time. As it spins the sun is always closer at the equator. It varies a little which is what gives us our seasons but it is always farther from the poles than anywhere else keeping the temperature colder there.

Thing's get colder in winter months because of the Earth's tilt, which is about 23 degrees, as the Earth orbits the sun different parts spend more time in, or out of the sun light as a result. Answer: Everything gets colder, in the long run, because of entropy. Simply put everything is running down. This process was started at the very beginning of the Universe when everything was very hot and it will end when everything in the Universe becomes the same low temperature. (Amusingly this is referred to as the Heat Death of the Universe) We can pump up the local netropy of something - warm up a kettle of water - by adding energy to it - but eventually larger forces take control and the water cools off. Living beings exhibit a locally high level of entropy because of their organization (another aspect of entropy) but eventually join the downward spiral

Evaporation takes heat to accomplish. The heat has to come from somewhere, perhaps your skin, for instance.

At the poles because the water is colder and less dense............

Very little - just colder.

Which what is latitude?

Latitude is the curvature of the Earth where it is hotter on the equator and it gets colder nearer the poles.

What effect do global winds have on climate?

Global winds drive heated air from the equator to the poles. It also drives colder air from the poles to the equator.
