When the average day time temperature drops to a certain average level and average amount of daylight decreases to a certain level and when the available moisture drops to a critical level, Hormones are released which tell the leaves to stop what they are doing. The chlorophyll leaves the leaf, taking the green color with it. The nodal connection to the tree releases and the leaf comes tumbling down. This whole process, called abscission and prevents the tree from losing anymore water through it leaves. At that time of year, the water supply is usually less and tree wants to conserve what it has.
