Saint Patrick's Day began as a Catholic observance. In the Catholic Church, a saint's feast day is celebrated only once per year. It is also usually on the anniversary of their death---in other words, when they entered Heaven. They have to make guesses with the saints' death dates that they don't actually know, like St. James or the Blessed Virgin.
