Some people develop eating disorders because they want to have more control of their life and refusing to eat or purging what they have ingested is way of doing that. Other times it is because they are depressed or hurt over something that has happened to them some time in their life and in a way hurting themselves makes them feel better although it is only a temporary fix and so therefore they have to repeatedly do it over and over. As far as anorexia nervosa is concerned that mostly arises from the person deciding they need to lose weight and take it to the extremes because in the beginning when they lose the weight that other people see as unsightly they get compliments and after being called fat or something similar for some of their lives it makes them feel better.
