I suppose this is mainly due to copyrights and issues thereof.
There have been made software to bypass these limitations, but possibly not legal as such to use.

You need iTunes to upload music onto your iPod.
If iTunes doesnt show the iPod there isn't a lot that you can do with putting music on it. The only way to put music on it and listen to it is that you use iTunes.
Press sync on the page of your iPod on iTunes at the bottom. If you want to keep your music, turn off the sync and drag it to your iPod in the side bar

I'm afraid that once the song is on the iPod, it stays on the ipod. This was made this way so that if one friend buys a song, he cannot download it to his ipod and bring it to his friend to upload it to his itunes so his friend can get a free song. You cannot upload ipod music to a mac.
