iPod touches are very restricted by Apple. They have capabilities that can be used but are locked. Jailbreaking lets you get free, pirated apps that you would normally have to pay for, and lets you customize EVERYTHING on your ipod. You can change the lockscreen, get more icons in the dock, get backgrounds, sounds, free music/movies, and get themes. By the way, I don't (well, not don't, but shouldn't) recommend doing this. Jailbreaking itself may or may not be illegal, but getting pirated apps, songs and shows IS.

That is actually impossible. Jailbreak is only for iPad, Iphone, and Itouch.
Updating the iPod Touch software erases the jailbreak. You can update, but it will erase your jailbreak.
its not 100% safe and still has a chance of breaking. Remember if you do jailbreak you itouch and it breaks your warrantee will cancel out and you wont be able to buy i new one unless you buy a new one. And you can jailbreak your itouch from either jailbreakme.com on your itouch or ziphone.org on your PC
