Why is the Mass so important to Catholics?

The Mass is celebrated because Jesus Christ - God Incarnate - told us to "Do This In Memory of Me (Luke 22:19-20)." And obeying his command, Catholics celebrate the Eucharist each and every day.

But more importantly, the Mass is the presentation, or re-presentation, if you will, of the Crucifixion, and one and only act of God wherein He gave His life in order to save us. With God, there is no time, He is outside of time, and eternal. When we attend Mass, we witness and participate in the grace of the actual crucifixion, FROM GOD'S POINT OF VIEW. Thus, although the crucifixion, Christ's sacrifice happened over two thousand years ago from our point of view, from His point of view, it is happening NOW. At Mass, God allows us to be witnesses, on Calvary, along with St. John, and His Blessed Mother, to His supreme sacrifice for us. Please note IT IS NOT "DONE AGAIN", Christ died once for all, and for all time. We are witnessing that one time, unrepeatable event.

The Eucharist is the entire Christian life, it is Our Blessed Lord, Himself, presented in the sacrifice of His Cross which is re-presented in the second half of the Eucharist. The first half is based on the synagogue service of the word, and the second half is the actual re-presentation of His Sacrifice on the Cross in which we mystically witness His Crucifixion and the graces of that event are made present to us.
