Because your body digests and uses what it can. It stores energy it doesn't need as fat and then you poop out what the body couldn't do anything with. So if you eat a candy bar, then exert yourself enough to burn the caloric value of the bar you will gain no weight. Your body will burn what it can and eliminate what it can't in your poo.
Well keep on eating healthy but maybe eat a candy bar now and then but even if you have arrived at your desired weight keep on eating healthy or you might gain that weight back.
