There are two reasons Florida was chosen. The first has to do with safety. Rockets are launched to the east to take advantage of the Earth's rotation to save on fuel. In order to ensure a failed launch or exploded rocket (for example, the Challenger in 1986) didn't rain down on neighborhoods and schools, NASA chose to launch over the water. To do this they needed to be on the East coast.

The Earth's rotation also has to do with why they chose Florida. Think of a bike wheel: when a wheel is spinning, the hub of the wheel spins slowly while the outer rim spins much faster. The same goes for the earth. The closer you are to the equator, the faster you are moving. NASA takes this velocity and, by the law of conservation of angular momentum, uses it to give ensure a rocket is already moving at a couple of hundred miles per hour before the engines even ignite. To maximize this effect, NASA wanted to get as close to the equator as they could, within reason, and still be in the U.S.

When you combine being on the east coast with being as far south as you can get (within reason), Florida is the only choice to make, and that's why they launch from Cape Canaveral.
