The sun is the anchorpoint of the earth.

We need to have a point of reference in order to measure distance.

The sun is this point of reference as it in relation to earth does not move.

We know the distance from the sun to the earth so that gives us another referance.

All we now need is the angle from earth toward a star and we can sort of calculate distance to the star :-)

There is a little bit more to it but the basic idea is there :-)

When it comes to actually studying stars.

We know that other stars with same type of light as our sun will be approximately same size.

Yet again it is used as a point of reference.

Regards.
